Cottage Cheese and Beet Sandwiches. When standing an hour in lemon juice, as directed elsewhere in this chapter, chop fine and combine beets with cottage cheese in the proportion of 1 third beets and two thirds cheese. Use for filling.
Savory Egg Sandwich Filling
1 tbsp. salad oil
¼ cup chopped sweet peppers
¼ cup chopped onions
a pair of level tsp. Be-jex or Savita (See p. 314 for recipe.)
half dozen eggs
1¼ cups chopped tomatoes Salt to taste
Braise the onion and pepper in the oil, stirring constantly till tender. Add Be-jex or Savita and cook totally, then add gently overwhelmed eggs, and cook slowly (stirring to cook evenly) till barely set. Add tomatoes, and cook over fire till tomatoes are well done. Cottage Cheese, Olives and Nuts
½ cup cottage cheese a pair of tbsp. chopped pecans

Bread

In creating whole wheat bread with yeast, the dough should not be allowed to rise as long as when created from white flour; it rises more rapidly, and must be kneaded down more promptly; the temperature should be kept even. On removing from the oven, moisten every loaf with cold water immediately, going over every loaf twice, and permit it to face uncoated till totally cold before covering or placeting away in the bread box.
Whole Wheat Bread
1 potato boiled in skin
1 yeast cake, fresh
1½ qts. water, including potato
3tsp. salt
½ cup fat
½ cup brown sugar
Enough flour to make stiff dough
Proceed to mix all ingredients in the usual approach, adding yeast last after moistening, then knead stiff at once; let rise, knead into loaves or rolls and bake when light.
